The average elevation is approximately 2,200 meters above sea level, and the area is classified as a high coffee-growing zone. The cherries are floated in large water tanks and sorted based on quality. After flotation, the cherries are transferred to African raised beds using nets. Fermentation takes about 12-15 days, depending on the average humidity. The dried cherries are stored in warehouses to allow the flavors to develop.
