Norbey is picked according to the best ripeness criteria. It is floated and sorted by hand to remove any defects. The coffee cherries are fermented under water for 30 hours before the pulp is removed*. The parchment is washed and stored under temperature-controlled conditions until the ideal humidity is achieved. This microlot is 100% Caturra. It is a variant of Minas Gerais, Brazil. It is a natural defect of the Red Bourbon. Caturra produces more coffee than Bourbon.
